Creative Flax Crackers

Basic Flax Crackers

    4 cups whole flax seeds, soaked 4-6 hours
    1/3 to 1/2 cup Braggs Liquid Aminos or Soy Sauce
    Juice of 2-3 lemons
    4 dehydrator trays

Soak flax seeds for 4-6 hours in purified water (approx. 4 cups to start). The flax seeds will turn into a gelatinous mixture, be sure to keep moist and loose for spreading. Add Braggs and lemon juice to taste and mix well. Spread mixture as thin as possible on your dehyrdrator trays lined with a Paraflexx sheet. Keep your hands wet as this will help to spread the flax seeds or use an off-set spatula. Dry at 105 F for 5-6 hours. Flip the mixture over and remove the Paraflexx sheet. Continue dehydrating until the mixture is completely dry. Approx. another 5-6 hours.

Experiment and Get Creative!
This is the creative part. I have taken the above recipe and experimented.
Savoury - add cilantro, chives and onion
Hot - add chopped jalpenos, scotch bonnet peppers (wear plastic gloves for spreading, be careful)
Toppings - add sesame, poppy, pumpkin or sunflower seeds to the top for extra crunch
Seasoning - experiment with tobasco, liquid smoke, italian seasoning, chilli powder, garlic, cumin, carrot juice, dried fruit (not all at once!)

Store in an air tight container. Eat plain or serve with hummus or other dips.

The basic recipe came out of the Excalibur book "Preserve It Naturally - The Complete Guide to Food Dehydration."
