Description:
Minestrone Soup, the Italian classic. To send this soup right over the top, might I suggest that you bring a good dried pepperoni, slice it up and toss it in the soup to make it really authentic. ( BTW, a well cured, vacuum packed, quality pepperoni will last a year at room temperature, so they are great on a trip. )
Portions:
Two people for lunch or to start dinner.
Preparation:
- In a large saucepan, whisk soup mix with 4 cups (1 L) cold water. Bring to a boil over moderately high heat, whisking constantly.
- Reduce heat, cover partially and simmer gently 10 minutes, whisking occasionally.
Ingredients:
Dried vegetables (tomatoes, potatoes, pinto beans, onions, cabbage, carrots, peas, green beans, garlic), pasta, corn starch, corn syrup solids, monosodium glutamate, beef fat, salt, wheat flour, hydrolyzed soy protein, dried parsley, ham, bacon & smoke flavours, yeast extract, citric acid, colour, artificial flavour, dextrose, sugar, hydrogenated soybean/cottonseed oil, disodium guanylate, disodium inosinate, silicon dioxide, wheat maltodextrin and sulphites. may contain traces of milk ingredient
Note:
When it says mix in cold water, make sure it is cold or you get lumps.
